Fargo Chef Brings Bistro, Spirits, Seafood and Cheese Markets, Classic Entertainment to Downtown Fargo

Downtown Fargo’s food, fun and shopping scene is about to get a bit bigger.

Rosey’s is set to open in February 2016 on the ground floor of 212 Broadway in the Loretta Building. The unique bistro and entertainment venue marks an expansion of space and concept of D’Vine, the quaint European wine and small plate bar on Roberts Alley.

Renowned chef and Fargo-born Tim “Rosey” Rosendahl is packing a lot of firsts into his new venture: Broadway’s first cheese and seafood market, Fargo’s first grand piano bar, and North Dakota’s first grilled cheese bistro.

“The Rosey’s concept emulates my favorite eclectic dinner parties,” says Rosey, whose resume includes graduation from the Culinary Institute of America, serving as Executive Chef of Culinary Development at Walt Disney World and Vice President of Culinary, Darden Restaurants/Red Lobster USA, as well as the President’s Award and “Chef of the Year” designation from the American Culinary Federation. “I want to create a space in downtown Fargo to bring together all walks of life and taste. There will be something for everyone.”

The Grilled Cheese Bistro of Rosey’s blends the classic comfort food with America’s hottest fast casual restaurant trend. Menu features include:

  • Moms Grilled Cheese, American cheese, white bread and tomato soup for dunking
  • BLT & Applewood bacon, lettuce, tomato and aged Wisconsin Cheddar Cheese on baked potato bread
  • The Scandinavian, goat’s milk Gjetost cheese and pears on Walnut Cranberry Bread
  • Rosey’s Favorite, Triple Cream Brie Cheese, Fuji apples, and Toigo Apple Butter on French peasant bread; and
  • For the spice lover, “Call the Fire Department,” Jalapeno Jack cheese, roasted Jalapenos, and Minnesota Red Table Cayenne Coppa Salami.

Rosey’s will include a seafood and cheese market, and Fargo’s first self-serve wine dispensing system, which allows Rosey to keep dozens of wines “on tap.”

Adding to the food and beverage offerings, Rosey’s will feature a grand piano bar which can serve as background music or an engaging sing-along experience. The flexible performance space will be open to the varied musical talents of the Fargo-Moorhead region.

Rosey’s will be open Monday through Saturday for lunch, dinner and late night. Rosey plans to also offer a “Beatles Bloody Mary Mimosa Bar Brunch” and culinary classes.

After decades of restaurant ownership in Florida, Rosey has returned to the Red River Valley and is excited to be back where it all began.

“I love the people of the valley,”Rosey says. “I love the hospitality of the folks here and I love the changing seasons. I’m proud to be part of Fargo’s renaissance and to partner with the organizations working to make this business community successful, such as the Downtown Community Partnership, The Chamber, and Kilbourne Group.”
